Day Three

Have continued to eat within acceptable parameters, but for one beer and a cornbread snack last night (left over from a pre-diet meal excursion). Last night I made up a big pan of what I'm guessing would best be called goulash, except it has no pasta: ground beef, tomatoes, mixed vegetables (a CostCo veggie mix known as "Normandy" -- it has a variety of vegetables and squash), kidney beans, spices. It may or may not be "chili" (though it is spicy). It should last the rest of the week, in any case.

Maybe I should be freezing these instead of eating them until I reach boredom?

I wonder about that too. If we cooked more, in bigger batches, we could switch around our leftovers-- IF we remember to look in the freezer when calculating the food in the house. :) If you figure out a neat system for this, please post it.

I find pre-packaging large meals into single servings helps me avoid the "eating till I'm stuffed or it's gone" problem.

I need to get into the regular habit of taking a serving and turning it into a lunchbox rather than going back for seconds. I eat way too quickly, and if I slow down, I find I'm full!
